Chocolate Mousse with Puffed Millet and Raspberries

Ingredients

  • 3 eggs, separated
  • 120g dark chocolate, broken into pieces
  • 1 tbsp unsalted butter
  • 120g whipping cream
  • 50g sugar
  • 50g Seven Shelves puffed millet
  • 50g raspberries

  1. Place the egg whites and egg yolks into two separate mixing bowls.
  2. Into the bowl of egg whites add the sugar and beat with a whisk until they reach stiff peaks, set aside.
  3. Into a small bowl add the dark chocolate and unsalted butter, microwave for 30 seconds to melt.
  4. Place the whipping cream into a bowl and whisk vigorously until it forms stiff peaks then fold in the egg yolks.
  5. Pour the melted chocolate into whipped cream and gently fold together.
  6. Then add 1⁄4 of the whipped egg whites to the bowl of chocolate mixture, whisk together to combine completely.
  7. Tip the chocolate mixture into the bowl of whipped egg whites and gently fold together, making the motion of a figure of eight.
  8. Divide the chocolate mousse mixture evenly into four small glasses then place in the refrigerator for 3 hours to set.
  9. Before serving, top each chocolate mousse with puffed millet and a few fresh raspberries.
