Berry Crumble with Puffed Millet Crust

Crumble is surprisingly easy to prepare and incredibly versatile with it’s fillings, our favourites include rhubarb, plum, apple, pear, damson and of course, berries. A combination ofdifferent fruits can be used or try baking with frozen fruits which produce a jammier centre.
The real prize of the crumble though is the pastry-streusel topping which sits above the juicy layer of berries. A crisp, buttery crust of golden brown crunchy bits packed with the flavour of nutmeg, oats and nutty puffed millet to contrast the sweet berries.

 Berry Filling
  • 1kg mixed berries (strawberries, blueberries, raspberries and blackberries)
  • 50g parmesan cheese
  • 1 lemon, zested and juiced
  • 50g plain flour
  • 50g caster sugar
  • 1 tsp ground cinnamon
Puffed Millet Crust
  • 125g plain flour
  • 50g caster sugar
  • 75g brown sugar
  • 1⁄8 tsp salt
  • 1⁄8 tsp ground nutmeg

Berry Filling
  1. Preheat an oven to 180C.
  2. Into a mixing bowl add the mixed berries, lemon zest, lemon juice, plain flour, caster sugar and ground cinnamon.
  3. Toss the ingredients together to coat evenly then transfer to the base of a baking dish and spread into an even layer.
  Puffed Millet Crust
  1. Into a food processor add the plain flour, caster sugar, brown sugar, salt and nutmeg, set the mixture to pulse for 30 seconds.
  2. Then add the diced butter and pulse until a crumb.
  3. Place the crumb into a bowl then add quick-cooking oats and puffed millet, stir together.
  4. Spread the puffed millet crust over the surface of the baking dish to cover the berry filling.
  5. Place the baking dish into the preheated oven and cook for 45 minutes.
  6. Remove the berry crumble with puffed millet crust from the oven and allow it to cool for 15 minutes before serving.
